Recipe Review: Vegan Carrot Raisin Muffins

Vegan with a Vengeance was my very first vegan cookbook and it has never let me down. The book is stained, warped and covered with love. Flipping through it this morning, I was shocked to see there was a Carrot Raisin Muffin recipe that I’ve never tried! And guess what?! I still have carrots and raisins left over from my Carrot Cake Baked Oatmeal experiment. Score – no trip to the store required.

Isa BowlBecause my poor cookbook is in such bad shape, I had to sub models. This is Isa Chandra Moskowitz’s badass vegan brunch cookbook. If you know me even a teeny little bit, you know breakfast is by far my favorite meal of the day.

These muffins require only basic ingredients (no fancy stuff!) and you’ll need just one bowl to whip up these bad boys.

Ingredients

1/2 cup raisins (soak in super hot water while you make the batter – it will look like soft stool, but don’t let it discourage you)

1 1/2 cups of flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon ground nutmeg

1/4 cup sugar

1/2 teaspoon salt

1 cup soy or rice milk

1/4 cup canola oil

1 teaspoon vanilla extract

2 cups grated carrot

Preheat to 400 degrees. Spray muffin tin with nonstick spray or lightly grease with oil.

Sift together flour, baking powder, baking soda, cinnamon, nutmeg, sugar and salt. Created a well in the middle and add milk, oil and vanilla. Mix with a spoon until just combined, then fold in carrots and raisins (drained from water).

Now, if you’re like me, this is when you freak out. There’s way too much carrot and raisin and not enough batter. This will never work! They will never hold together. Damn it.

I’m sorry I doubted you, Isa. After baking for 18-22 minutes, the muffins were absolutely perfect. They are moist and have just the right amount of sweetness for a morning muffin.

Cooking Tips

  • Tell your friends, partner, or kids that these muffins are full of healthy carrots – means more for you
  • Don’t over mix – it really doesn’t take much stirring
  • Go buy all of Isa’s cookbooks
  • Enjoy while still warm with a dollop of Earth balance vegan butter (gawd…so good!)
  • Snapchat your bowl of poop raisins, because it’s just funny
