I’m totally for faking it. I fake it all the time. Like my Betty “Crock” Chocolate Chip Cookies, this recipe is another knock-off from Betty. Get the coffee ready for this tasty Vegan Banana-Chocolate Chip Biscotti.
First, preheat your oven to 350 degrees and grease a large cookie sheet.
1 cup of sugar
½ cup of Earth Balance or other vegan butter
1 ½ mashed ripe bananas
1 1/4 teaspoon vanilla
3 cups all-purpose flour
3 teaspoons baking powder
¼ teaspoon salt
½ cup vegan chocolate chips
Beat sugar and butter with a mixer. Stir in banana and vanilla until smooth. Add in baking powder, salt and flour. Once mixed well, stir in chocolate chips.
Divide dough into two equal sized balls. Form each ball into a long rectangle on the same cutting sheet. The dough should be about 3-4 inches wide.
Bake 22-25 minutes until toothpick comes out clean. Cool for 15 minutes.
Slice into ½ inch pieces and place side down on the cookie sheet. Bake for another 10 minutes until golden brown and dry on top.
Flip the biscotti over and bake for another 8-10 minutes. Watch carefully so you don’t over toast.
- Have Louis Prima, Frank Sinatra and Dean Martin playing while you bake. It makes the biscotti taste better, I swear.
- Biscotti is served with coffee. Dunk and soak before taking a bite.
- After you form the dough into rectangles on the cookie sheet, roll a round glass or rolling pin over the top to hide any finger marks.
